Make Chocolate Ganache Using A Microwave
Jean-Francois Suteau, the Executive Pastry Chef at the Beverly Hills Hotel, shares with you how to make a smooth, chocolate ganache. You will learn his secret for creating chocolate ganache with a velvety texture and glossy sheen.

You’ll need:
1 cup of 70% dark chocolate
1 cup heavy whipping cream
Serving size is for glazing one 6″ cake or 6 small cupcakes
Instructions:
1. Melt the chocolate for 20 seconds at a time on low power in microwave for up to 2 minutes.
2. Boil the cream.
3. Add the cream little by little to the chocolate making an emulsion.
4. Be sure to add the cream slowly otherwise the cocolate won’t be smooth.
5. If you’re using the ganache as a frosting be sure to let it cool for two hours at room temperature.
