Mr. Tortilla Head with Buzz’s Mango Tango Salsa By Miranda Becker

Kids can use pre-cut veggies and a whole-wheat tortilla to make this familiar funny face, paired with a sassy salsa.

You’ll need:

For Mr. Tortilla Head:
* 1 whole-wheat tortilla
* 1/2 avocado
* 4 pitted black olives
* 1 slice cucumber
* Red bell pepper
* Yellow bell pepper
* 2 slices heart of palm
* Cooked shredded chicken (optional)
* Cooked ground beef (optional)
* Shredded cheese (optional)

Note: This vegetable is harvested from the soft core of a palm tree. It has a delicate flavor, similar to that of an artichoke heart and can be bought canned in most grocery stores.

For Buzz’s Mango Tango Salsa:
* 1 cup diced mango
* 1/2 cup diced seedless cucumber
* 1 tablespoon red onion, finely minced
* 2 tablespoons lime juice
* 1 tablespoon chopped cilantro
* 1 teaspoon finely minced jalapeño, ribs and seeds removed
* Salt to taste

Note: You can adjust the jalapeño to taste, add more if your family likes spicy foods and less for kids who don’t enjoy it. The seeds and ribs of jalapeños hold much of their heat. By removing them you make milder salsa.

Instructions:

1. To prepare the head, place a whole-wheat tortilla on a plate.

2. For the face:
* Use a sliced heart of palm as eyes.
* Cut 2 black olives in half to use as pupils.
* Cut a cucumber slice in half and use each half as an ear.
* Cut an oval from a yellow bell pepper, for the nose.
* Slice an olive in half length-wise and use as a mustache.
* Cut a half circle from a red bell pepper for the mouth.
* A half avocado, with a slice of avocado as the brim is Mr. Tortilla Head’s hat.

(You can use cookie cutters or fondant cutters for cutting shapes from bell peppers and other soft veggies).

3. Kids can arrange their own funny faces and add features to personalize their tortilla heads.

4. For the salsa, combine mango, cucumber, red onion, cilantro, lime juice and jalapeño in a bowl. Salt to taste.

5. Once your child has enjoyed the funny face, you can add cooked shredded chicken breast, ground beef or cheese along with the salsa topping. Set up a toppings bar and let everybody top their own. Roll up the tortilla and serve it taquito-style.
