Kanga’s Pita Pouch Sandwiches with Garden Egg Salad By Miranda Becker

Kanga knows a thing or two about keeping little Roo healthy. Stuff your salad into a whole-wheat pita for a tasty twist on the classic.

Serving suggestion: Instead of packing sandwiches in plastic bags, use waxed paper and adhesive labels to create a kangaroo pouches for your sandwiches. The paper pouch is better for the environment than plastic and helps little hands to hold their sandwiches together while they eat!

You’ll need:

* 8 hard boiled eggs
* 1/4 cup mayonnaise (or to taste)
* 1 Tablespoon coarse-grain mustard
* 1/4 cup shredded carrot
* Salt and pepper to taste (optional)
* Whole wheat pitas
* Pastry cutter or two butter knives for cutting eggs
* Waxed paper
* Self -adhesive labels
* Markers

Instructions:

1. To start, peel hard boiled eggs and discard shells. (If you like, let kids roll eggs on a cutting board to break the shell, then peel).

2. Cut eggs in half and place them in a large mixing bowl. Cut eggs into bite-sized pieces using a pastry blender. If you don’t have a pastry blender you can use two butter knives. This job is perfect for kids, eggs are soft and easy to cut and the pastry blender makes the job quick and easy!

3. Mix in mayonnaise, mustard and shredded carrot. Stir until well combined.

4. Salt and pepper to taste.

5. For the pouches, cut a 12″ length of waxed paper for each sandwich.

6. Next, fold the bottom of the waxed paper up to meet the top. Then fold each side of the paper into the center to create an envelope large enough to accommodate your pita.

7. Place a self-adhesive label along the overlapping seam, to hold your pouch together. You can let kids decorate their own labels. This is a great way to serve sandwiches at a party, and the labels will let guests know what’s inside your pitas.
